Wafel & Dinges with Speculoos Ice Cream

I've heard of Wafel & Dinges' Belgian waffles for some time but their food truck was never in the same neighborhood as I. . .  until today I saw them at Columbus Circle.  I'm so happy I had the opportunity to try it!

I ordered De Bom which is a hot wheaty waffle topped with creamy Speculoos Cookie Ice Cream and their signature Speculoos Spread. Speculoos is a kind of Belgian gingerbread/shortbread cookie that is very tasty!  Their special ice cream is made by chef Benoit Gerin of Mont Blanc Dessert.

Coincidentally, last week was National Wafel Day 2011 -- there are some cute drawings on their Facebook page.
