Holiday Muffin Recipe

My friend's two little girls made some delicious Thanksgiving muffins that I want to share with you.  The muffins are very moist, flavorful, and easy to make.  = )
Ingredients:
2 cups all purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup chunky applesauce [or 1/2 cup applesauce and 1/2 cup chopped granny smith apples + 1/2 cup water if you like having pieces of apple]
1/2 cup canola oil
1 tsp vanilla
1/2 cup cranberries, washed, discard bruised ones [or dried are great]
oil to grease loaf pan or tins
Preheat oven to 350
Combine all ingredients except cranberries and work through with spoon/spatula until mixed through.  
Add cranberries and stir until combined.

Grease loaf pan or 12 muffin tins.  Pour in batter.  

Loaf pan bakes in about an hour.  top should be golden brown and in inch or so above pan.  check doneness with toothpick.
Muffins bake in 25-30 minutes.  check with toothpick.
